Section 01Central kitchens.

GRILZO operates a network of central kitchens that prep, marinate and pack core ingredients before delivery to carts. Quality, hygiene and cost are controlled at the source — not at the cart.

Why central matters

A network of 100 carts cannot rely on 100 small purchases. Centralisation buys cost stability, taste consistency and food safety.

Section 02Daily ordering.

Cart partners place daily orders via the supply app. The app suggests order quantities based on the previous 7 and 30 days of sales — adjusted for weekday, weather and event signals.

  1. Cart closes at 23:00 → daily report submitted
  2. App suggests next-day order at 06:00
  3. Partner reviews, adjusts, confirms by 08:00 cutoff
  4. Distributor packs and despatches by 10:00
  5. Delivery to cart by 13:00, ready for evening peak

Section 03Cold-chain logistics.

Distributors operate refrigerated LCVs with temperature loggers. Every delivery comes with a chain-of-custody temperature record.

  • Refrigerated transit at 2–4°C for proteins
  • Ambient transit for stable shelf items
  • Temperature logger handed over at receipt
  • Reject SOP — clear thresholds for refusal at the cart

The supply SKU set is deliberately compact — fewer SKUs, better control.

Things break. The supply chain is engineered for it.

  • Stockout SOP. Cart can pull from a sister cart within 5km — logged, reconciled in 24 hours.
  • Distributor failure. HQ has a backup distributor for every territory (audit-ready).
  • Quality reject. Refused goods replaced within 4 hours; cost borne by distributor.
  • Festival surge. Pre-positioned stock for major festivals based on prior year's data.
